ヴィーガンニョッキ Vegan gnocchi

今日はポテトとほうれん草のニョッキを作りました。写真は茹でる前です。空豆みたい。ニョッキ、売ってるものは卵が入ってるのが多いのです。意外と簡単に作れるニョッキ、色々と生地のバリエーションを変えて楽しむことができます。カボチャやサツマイモ、人参を使ったり、生地にスパイスやハーブを練り込んだり。それによって、またソースも変えて、と組み合わせは無限大。一人で餃子みたいに黙々と作るのもまたなんとも楽しい。
材料(2〜3人分)

1、じゃがいもは柔らかくなるまで蒸す。冷凍ほうれん草は解凍して出て来た水気を出来る限り絞る。生を使う場合は茹でて水気を絞ったものをフードプロッセサーにかけてペースト状にするか、包丁で出来る限り細かく刻む。すり鉢を使ってもいいかも。 2、蒸したジャガイモをマッシュしてほうれん草とよく混ぜ合わせる。できるだけなめらかになるように。 3、2に塩と小麦粉をまぜて、練らないように、でもまんべんなく混ぜる。 4、打ち粉をした台の上で3を細長いヘビのようにして丸めたら1cm大になるくらいにカットしていく。カットしたものを丸めてニョッキぽく形作る。 5、くっつきやすいので、形作ったら小麦粉をまんべんなくまぶしておく。パスタを茹でる時のように、大きな鍋に沸騰したお湯に塩を入れて茹でる。浮いてきたら食べごろです。 |
今回はリーキとマッシュルームの豆乳葛クリームソースを合わせました。バジルをたっぷり入れたソースです。今までニョッキは重いのであまり好きではなかったのですが、今回作ったのはさっぱりしていて、上の分量を二人で平らげてしまったくらいです。次回はさつまいもとじゃがいものミックスでやろう。そうそう、ドイツではスーパーにいつも調理法別にじゃがいもが何種類か売っているのですが、今回つかったのはMehlig。「メーリッヒってなに?」とじゃがいもの前で話していたら、前にいた女の人がこれはマッシュポテトにいいよ、と教えてくれました。Mehligの意味はホクホクです。なのでホロホロとしてて崩し易いからマッシュポテトにはもちろん、ニョッキやコロッケ作りの時も作業が楽になります。

I know i wasn't here yesterday. For those that missed me, i am sorry... For those who didn't, your problem...So, yesterday was peanut sauce, and today it's gnocchi. Now, there's a word you never know how to write... When i don't know how to write a word i go to google, and put in the word as it sounds. It works wonderfully with words like... incredible (try incredibel) or... any other words like this. But with gnocchi it doesn't work! There are too many entries of "Nyoki", so, you think this is the right spell. And then comes a serious italian guy and gives you the famous italian "you laugh at my food?" look. Don't mess with italians when it comes to food! And don't call them Terone. Or maybe try, and then you will understand you don't do that....
So, this gnocchi was hand made here at home. It's actually rather easy to make gnocchi, but you need to be an expert to make it REALLY good. This was a great gnocchi. With spinach and potatoes. There was a sauce to that, but i guess the pictures didn't come up so good, so... you will not see the sauce! Ha! But you WILL see, is the beer i drank.
Rie falls in love with bio companies all the time. The last one was Rapunzel (she still likes them!), and now, it is Demeter. So now, everything that is labeled "Demeter" is good. And when i went to buy a beer, one bottle caught her eye. Guess why?... Demeter. So they make beer too... go figure. |It wasn't the best beer i ever drank, but it's not at the same standards as other german bio beers i tried here. But, you are more than welcomed to try! :-)

** So, an edit. After Rie read what i wrote, she explained to me, that Demeter is NOT a company. It is actually a certification. It means it's... really good? Something about the way everything is being grown and stuff. Maybe she will write about it one day. Let's hope!... Anyhow, she is still in love (aplatonic, of course) with it :-)
