レンズ豆カレー Lentil curry

またまた豆。今日はレンズ豆です。レンズ豆の良いとこは調理時間が短くて済むこと。戻さなくていいこと。いつもウチで使うレンズ豆は赤(というよりピンク)で小粒のものです。スープ系に使います。サラダなどにはよく黒っぽく(もしくは緑)て大粒のものが使われています。今日のカレーはカレー粉と他のスパイスも少し、好みの野菜を一緒に煮て、レンズ豆を加えるだけ。はじめはスープみたいですが、レンズ豆を形がなくなるまで煮込むとトロっとしてほっくりのカレーになります。日本を離れてしばらくは、カレーといえばあのルーのカレーて感じで時々食べたくなって作っていたけど(アジア食材屋さんでルーが買えるんです)、最近はもっぱら自分でカレー粉で作るほうがさっぱりしていて好きです。特にこのレンズ豆カレーは。というか豆が好き。豆はおいしい!ベジタリアンでない人も豆カレーは肉なしでもかなり満足できると思います。豆ってのは、ほんと、畑の肉なのですねぇ。
今日使った赤レンズ豆は形がなくなる程煮込むのに30分くらいです。形を少し残しておきたければ、20分くらいでいいと思います。これはホントお好みで。野菜もしかり。私はカリフラワーをレンズ豆を入れる時に一緒に鍋に入れました。跡形もなくなってしまいますが、カリフラワーの甘みがカレー鍋全体に広がって、私好みです。これも形を残したい、もしくはホクホク感を残したい場合は、レンズ豆を入れてから15分後くらいに投入します。
材料(3〜4人分)
![]() | 1、ニンニク、ショウガはみじん切り。オリーブオイルを熱した鍋に入れて、香りが出るまで炒めます。そこに1cm角の角切りにした人参、タマネギを加えて炒め、少ししんなりしたら1cm角に切ったエリンギも加えて炒めます。 2、1の鍋にカレー粉、ガラムマサラ、クミンを入れて、1分程炒めます。そこにトマトペーストも加えて、よく混ぜ、水1リットルを加えて沸騰させます。 3、2が沸騰したら洗って水を良く切ったレンズ豆を入れて、再び沸騰したら、火を弱めてフタをしてことこと煮込みます。時々かき混ぜるのを忘れずに。(とろとろカリフラワーがお好きな方はここでカリフラワー投入) 4、15分ほど経ったら、カリフラワー(ホクホクがお好みの場合)、インゲン豆を入れて、フタをしてレンズ豆が好みの固さになるまで煮込みます。 *煮込み加減、野菜の投入タイミングはホントお好みでどうぞ。はじめの人参、タマネギ、エリンギは炒めた後30分ほど煮込むのが私的にはベストです。 ←赤レンズ豆 |

Up until three days ago, i didn't know there are different kinds of yellow curry. You know, this indian one, that makes everything yellow. So apparently, there are a few types of curry. And rie bought "English Curry". I am not sure what the difference is, but she used it today in this Lentil dish instead of regular indian curry. And as you can see, the english one also makes everything yellow...
This sauce also containt cauliflower and a wonderful kind of mushrooms called eryngii or king trumpet mushroom. (picture added)
The rest is in general red lentil which were cooked quite a long time to allow them to get softened. Amazingly tasty, and very healthy! Again, if you want a recipe, just let me know and i will translate it fully :-)
We have a special cup in the house, that is use to measure rice. If using this cup, we get the exact amount of rice for two people. A magic cup. But today, for some reson, someone (not me) decided to make a lot more rice. I am not sure how many cups it was, i guess two (the rice also contained wheat, so... this also could have made the difference). But, we had a lot of rice for two people. And, it was almost finished... I guess everyone have a way to measure things (my mom would say to use your eyes... the best way of measuring, i guess...), but i found out today, that sometimes, not measuring and just doing whatever you want, is sometimes a lot better. Try it! not only in cooking...
